Crumble topping:
- 1 cup all-purpose flour
- ⅓ cup granulated sugar
- ⅓ cup light brown sugar
- ¼ teaspoon kosher salt
- 8 tablespoons unsalted butter, cut into small pieces
- ½ cup 1-minute oats
Plum filling:
- 2lb. plums, pitted and cut into ½ inch square pieces
- ⅓ cup granulated sugar
- ¼ cup all-purpose flour
- 2 tablespoons orange juice
- Preheat oven to 350 degrees (or make filling and crumble ahead of time and refrigerate separately).
Crumble topping:
- Combine the 1 cup flour, ⅓ cup granulated sugar, brown sugar and salt in a food processor and pulse to combine.
- Add the butter and pulse until the butter is the size of small peas.
- Pour the mixture into a bowl, add the oats and work with your hands until combined. Press the dough between your hands to form large balls.
- Set aside (or refrigerate, covered, if making ahead).
Plum filling:
- In a large bowl, combine the sliced plums, ⅓ cup granulated sugar, ¼ cup flour, and orange juice and mix.
Putting it together:
- Pour plum filling into a pie dish greased with butter.
- Crumble the large balls of topping over the plum filling so that all the fruit is covered.
- Bake for 40 minutes, or until the plum filling is bubbling and the topping is golden brown.
