What a week it has been! We started off by celebrating Mr. L’s dad’s birthday weekend at our house, which meant a visit from Bammie and PopPop. The kids LOVE having them around (and we do too). On Monday, we made a plum crumble for PopPop’s birthday “cake.” It is the simplest dessert to make, and it always turns out delicious.
- 1 cup all-purpose flour
- ⅓ cup granulated sugar
- ⅓ cup light brown sugar
- ¼ teaspoon kosher salt
- 8 tablespoons unsalted butter, cut into small pieces
- ½ cup 1-minute oats
- 2lb. plums, pitted and cut into ½ inch square pieces
- ⅓ cup granulated sugar
- ¼ cup all-purpose flour
- 2 tablespoons orange juice
- Preheat oven to 350 degrees (or make filling and crumble ahead of time and refrigerate separately).
- Combine the 1 cup flour, ⅓ cup granulated sugar, brown sugar and salt in a food processor and pulse to combine.
- Add the butter and pulse until the butter is the size of small peas.
- Pour the mixture into a bowl, add the oats and work with your hands until combined. Press the dough between your hands to form large balls.
- Set aside (or refrigerate, covered, if making ahead).
- In a large bowl, combine the sliced plums, ⅓ cup granulated sugar, ¼ cup flour, and orange juice and mix.
- Pour plum filling into a pie dish greased with butter.
- Crumble the large balls of topping over the plum filling so that all the fruit is covered.
- Bake for 40 minutes, or until the plum filling is bubbling and the topping is golden brown.

The not-so-fun part of the week happened on Monday. My dermatologist found an abnormal mole during my annual skin check, and I had to have it removed Monday. Because it was the tiniest mole, I mistakenly thought the procedure was going to be an in-and-out thing. Two stitches at most. Um, nope.
The mole was a pre-melanoma, so not cancer, but it contained cells that could switch to melanoma at any time–or never. The surgeon ended up treating the mole conservatively and removed it with a margin of 3mm around all sides. So with the 3mm and the mole and then a little bit extra on the top and bottom (imagine a football), I ended up with a 1.5in incision on my back with nine (!!) stitches. The worst part is that I’m not supposed to lift The Dot or work out for two weeks (!!!). And no swimming :(.
// THREE //
Because I’m not supposed to lift The Dot for two weeks, I’ve been spoiled with lots of helpers. Mr. L’s parents changed their plans and graciously stayed through Wednesday to help me out with the littles. Mr. L’s mom made a delicious (and fantastically simple) chicken meal for dinner Tuesday night. And then my mom came Wednesday and Thursday to help me out too. She brought the BEST watermelon for us to snack on. It was amazing.
// FOUR //
This week I had to get creative with things to do around the house. We have been having a lot of outdoor playtime in Little L’s new sand box. The pop-up canopy has been a life saver out there because it is SOOOO hot outside.
On Friday, I blacked out the windows in the play room upstairs and set up snuggly blankets and stuffed animals on the ground for a movie day.
Little L had around a thirty-minute attention span for the movie, but he enjoyed all of the movie theater treats. I set them up on a little tray and let him fill up his bowl with popcorn, candy, and whatever else he wanted.
// FIVE //
I can’t stop eating these.
Where have plantain chips been all my life?! They are the perfect mix of sweet and salty. And I feel they must be healthier than potato chips, but really I have no idea. I’ll have to Google that later because frankly I don’t want to know. Must. Keep. Eating.
